( ma-‘tat-e ) a stone with a concave upper surface used as the bottom millstone for grinding grains especially maize. When planting the estate vineyard, we encountered many ancient ruins. Scattered among the ruins were metate stones left by the Anasazi. Each year this wine is a blend of the best barrels from our cellar, usually from estate fruit. 66% CABERNET SAUVIGNON 34% SHIRAZ After eighteen months of aging in French oak barrels, we blended this wine and aged for an additional six months. The Cabernet brings bright fruit and tannin while the Shiraz lends pepper, spice and a rich mouthfeel to a lingering finish. Metate is the base stone used to grind maize by the Ancestral Puebloan people of our region. We designate the best blend we can produce from a vintage to be Metate.
